Beverly’s Spinach Manicotti

Ingredients

1½ cups Ricotta Cheese
1½ cups Cottage Cheese
1½ cups Mozzarella Cheese
1½ cups Parmesan Cheese
1½ cups finely chopped spinach
½ cup Pesto (optional)
1 egg beaten
2½ cups Marinara Meat Sauce
(For simplicity, use any spaghetti sauce of your choice mixed with approximately ½ pound cooked ground beef)
12 partially cooked (approximately 7 mins) manicotti shells, rinsed in cold water

Directions

Preheat oven to 350 degrees

Spread ¾ cup of Marinara Meat Sauce onto the bottom of 13x9 inch baking dish.

Mix Ricotta, Cottage, ½ c Mozzarella, ½ c Parmesan, egg, spinach and pesto (optional). Spoon mixture into a resealable plastic bag.  Use scissors to cut small corner from bottom of bag.

Fill manicotti shells by squeezing cheese mixture into both sides of each shell.  Place into baking dish and top with remaining sauce. Sprinkle remaining cheese (Mozzarella & Parmesan) and cover.

Bake 40 mins.

Cool 10 mins. before serving
